Recipe: Accomplished

I have been in a cooking rut. I admit it. We haven't even been eating out that much but our schedules have been really hectic lately and so lately it seems like we have had pre-prepared meals. Ramen noodles with some fruits or veggies, chicken nuggets, fish sticks. All oh-so-healthy foods that I'm sure in moderation are fine but I think my family was wishing I would go back to my meal planning. So I did. And I found 4 new recipes that I wanted to try out. Wednesday night I planned on making skillet lasagna. I am not a lasagna fan due to the fact that the ricotta (or cottage) cheese sicks me out. But this recipe was just noodles, beef and sauce. Give or take a few ingredients. What's not to like about that? It's like spaghetti. I love spaghetti! And it was new. So I thought I would give it a whirl. Here is the recipe from Betty Crocker. I will say that my foray into this did not start as expected. I had put some ground beef that I had cooked a few weeks ago that I had froze in the fridge to thaw out so I could just toss it in with the other ingredients when I got home from work. Well I got home from work and grabbed the baggy and realized it was NOT ground beef. Apparently I need to label better (I mean label at all). It was some barbecue that I had cooked a while ago. I guess I'll just have to take that for lunch sometime this week! But other than that everything went pretty smoothly. I even made my own garlic bread from a loaf of french bread I picked up on the way home from work. Super sweet!

The outcome was that it was delicious. My hubby is not a foodie so when I asked him he was like...it was ok. I was like, well it will be on the menu again. And I even cleaned up the entire kitchen when we were finished eating. It was so nice. Dishes done, counters cleaned up, stove washed off. It felt very rewarding! The next new recipe will be tried out on Friday. Crock pot pork chops. Hopefully that outcome will be just as good!

I love it when I get motivated to clean the kitchen at night. Doesn't happen often. Score on the recipe--I'm going to give it a try. Thanks for the suggestion, it's got to be better than Hamburger Helper.

Crockpot recipes are usually no fail. I have a wonderful turkey chili recipe I make in the crockpot, which I double every time so we have it for lunches, another dinner, and such throughout the month. Delicious!
